Parmesan Squash

4 yellow squash
1 tbsp butter
2 tsp kosher salt
2 tsp black pepper
2 tsp garlic powder
1/3 cup Parmesan cheese
2 tsp Avocado oil
1 egg
1/2 cup pork rinds

We received a good amount of squash during the farming season, and I try to find new and healthy ways to prepare. I had no idea how this recipe would turn out, but it turned out very well!  Everything in this dish is on our "approved" list for our lifestyle diet.

First, grind  pork rinds in a food processor until they are like a powder. Set to the side or if you like, toast them in the oven for a few minutes.

Dice up your squash and put in a pan. Add butter and cook on medium until squash is tender. Mash up the squash and allow to cool.

When mixture has almost cooled to room temperature, add salt, pepper, garlic powder, Parmesan, and egg to squash and mix well.

Spoon mixture into a pan with avocado oil on medium high heat. Sprinkle pork rinds on top. Allow squash to cook about 4-5 minutes then gently turn over or stir. Sprinkle a little more pork rinds on top. Allow to cook until desired brownness.

This yielded enough mixture to serve 5 people. It was very tasty! Try it sometime when you are bored with yellow squash.
