Turkey Meatballs With Zoodles and Romesco
In continuation of our favorite Whole-30 recipes, we have spaghetti with zoodles and our Romesco sauce which can be found here. The zoodles will also be the same as the shrimp Romesco. Here are is the recipe for the meatballs. The recipe originally called for ground chicken but we altered it a bit and used ground turkey.
1 lb ground turkey
1/3 cup onion,diced
1 tsp minced garlic
1 tsp dried oregano
1 tsp kosher salt
1/2 tsp black pepper
2 tsp clarified butter
Mix turkey, egg, onion, garlic, oregano, salt, and pepper together with clean hands. Roll the mixture into balls, and little smaller than golf balls. Since I used the ground turkey, we only managed to get about 12 meatballs from it, rather than 15 as the recipe mentions.
Place meatballs in a medium-high skillet with clarified butter. Let meatballs cook on each side until browned, about 3 minutes. Place skillet into a preheated 350 degree oven and cook for 15 minutes.
Construct your noodles and add sauce and meatballs.
