Diner Breakfast

This is a tasty dish that originally started out as a Whole30 recipe but became more of a paleo recipe once I added some sriracha to it.  This is a great breakfast, and the runny yolk of the egg in the mix gave it a great creaminess.This will serve at least 2 but can serve 4. If you feel like you want more ratio of other items, feel free to add more. Of course you will need to adjust the amount of eggs for each person as well.

1 1/2 cups sweet potato, sliced
1/2 cup onion, diced
1/2 cup bell pepper, diced
1 lb ground turkey
1 cup spinach, diced
2 eggs, sunny side up
1 tsp sriracha
salt and pepper to taste

Add 1 tbsp clarified butter to a skillet. Take your turkey meat and brown on medium heat until almost cooked. Add sweet potato, bell pepper, and onion. Salt and pepper. Let veggies cook until tender, about 8-10 minutes. Add spinach and let heat through. Salt and pepper to taste.

In another skillet with 1/2 tbsp clarified butter cook your eggs sunny side up on medium heat until they just barely are set.

Plate your veggie mixture and sprinkle with sriracha. Place your eggs on top. Enjoy!
