Grilled Chicken Bruschetta Via Skinnytaste

We found a recipe on that involves a grilled piece of chicken, and bruschetta. Sounds delicious and is not bad for you? I'm in.  We found this recipe to be quite good, one that we could do on a regular basis. The recipe was tweaked a bit, but the core recipe is about the same:

1 tbsp minced garlic
2 tbsp fresh basil leaves, chopped
1/2 yellow onion, diced
1 large tomato, diced
1 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp mozzarella cheese
3 chicken breasts, grilled
Salt and pepper to taste

In a bowl, place onion and add olive oil, and vinegar. Add diced tomato. Salt and pepper to taste. To prevent cheese from getting soggy from the mixture, fold the mozzarella in right before serving. 

Place mixture on top of your grilled chicken. We  had green beans and cooked mushrooms with ours. It was great! Try Skinnytaste when  you want some great recipes that are not too bad for  you.
