Cream Cheese and Mozzarella Stuffed Chicken


I love nights where I can just be creative in the kitchen. I heard and read the idea of stuffing chicken breasts with cream cheese, but I have never tried it. I wanted to go a step further, by adding a little mozzarella cheese as well. The result? A bacon wrapped piece of happiness.

3 boneless chicken breasts
8 oz cream cheese
1 tbsp mozzarella cheese
3 strips bacon
Salt and pepper to taste


Take your strips of bacon and cook on 350 degrees for 10 minutes. You want to cook it through but not to the point of becoming crispy. That will occur when you cook it in the oven. Take it out after 10 minutes and let cool to the side.

Take your boneless chicken breasts and lay them on a cutting board, then cover with plastic wrap. Take any kind of heavy kitchen utensil and pound the chicken until it is about 1/4 inch thick. Salt and pepper the side that will be the inside of the stuffing mixture.

Take your cream cheese and add mozzarella cheese. Mix with a spoon or with clean hands. Divide the cream cheese mixture evenly between the three pieces of chicken.

Place the cream cheese in a heaping ball in the center of the breast piece, and spread towards the end of the chicken but not all the way to the end. Begin rolling your chicken until it will tuck under itself. Repeat with the other two pieces. Be sure to wash your hands and sprinkle more salt and pepper over the top of the chicken. Wrap bacon around each piece.

Take your chicken and add to a cast iron skillet that is at medium heat. Let the bottoms cook for about 3-5 minutes. Afterward, place skillet in a preheated 375 degree oven and cook for 25-30 minutes.

After that time if the bacon is not crispy enough, put on broil for about 3 minutes.

I served this with some sweet potato fries. It was awesome! This dish was very easy, and had a lot of  flavor.  I just need to keep cream cheese stocked in the house!
