Butternut Squash Chili

My wife made some chili the other night and put something in it I would have never thought. Butternut squash! I was amazed how good this dish actually was. So here is what we did:

1 tbsp. butter
1 cup onion, chopped 
3 tsp. garlic
1 tbsp. chil powder
3 tbsp. ground cumin
1 tsp. ground mustard 
2 tsp. smoked paprika
1 lb. ground turkey
3 c. tomato juice
1 cup green peppers, chopped 
1 can diced tomatoes
2 c. turkey broth
1 can kidney beans
1 medium butternut squash, peeled, seeded, cubed and cut into 1/2 inch pieces 
Salt and pepper to taste 

Roast butternut squash on 400 for about 15 minutes (spray with cooking spray). While thats roasting, put butter, green peppers, garlic, onions into pan and sautee for about 3-4 minutes. Add spices and stir to coat veggies. let cook an additional 2-3 minutes. Add turkey and cook until done, stirring a lot to make sure the spices are evenly distributed. When turkey is done, add canned tomatoes and stir. Add beans and broth and let cook for 10-15 minutes. Add squash and tomato juice and cook an additional 10 minutes. Salt and pepper to taste.

It was great chili. I don't even like chili and I'm saying its good.
